Cải bó xôi lặt bỏ lá úa, rửa sạch, để ráo, cắt khúc. Tỏi băm nhuyễn. Đun nóng chảo với dầu olive, cho tỏi vào phi thơm thì cho cải bó xôi vào xào đến khi chín mềm thì nêm chút muối và tiêu rồi tắt bếp, để nguội. Cho cải bó xôi vào máy xay với tỏi, phô mai và 100ml nước luộc mì khi nãy. Bật máy xay hỗn hợp thật nhuyễn mịn. Cho hỗn hợp vừa xay ra chảo, đảo nóng rồi cho mì vào trộn đều lên, tắt bếp. Gắp mì lên dĩa, có thể nêm thêm chút muối, tiêu, rắc phô mai rồi chỉ việc thưởng thức thôi nè.
